The Pandolfa wines are created in newly equipped facilities and structures, completed in 1997 that have an operational capacity of more than 7,000 quintals (15,432 pounds) of grape.
Magnificently integrated, close to the main Villa, with a sober and elegant architecture, they consist of:
- above-ground department to receive and select the grapes, the pressing and the first wine-making;
- underground storage department for refinement in tanks and secondary fermentations.
All the containers are caulked and under thermal control.
The Pandolfa wines that require ageing are refined in oak barrels in the old wine cellars under the eight-century villa.
The bottling system is composed of a semi-automatic line that includes a bottle washer, filler, corker, capper, labeller and case packer for bottles of 0.75 litres and 1.5 liters both with cork caps and screw caps at an average of 2,000 bottles per hour.
Recently, an installation has been bought for the bag in box packing.
All the conditioning installations and the rooms are placed in different areas and they can be sterilised with environmental vaporisation systems.
